Muchin de yuca / Yuca croquettes

I don't know about you but I appreciate recipes that go along with photos to easily follow the process. In the next few posts I will share some of my favorite dishes from Ecuador. These recipes remind me of my mom in the kitchen preparing them and being in the background playing or doing my homework but already knowing what she was making by the aroma coming from the kitchen. As a child, I didn't always enjoy or appreciate the food and connection with my culture but as an adult who enjoys cooking and craves my momma's home cooking all the time.... I've set out to let those dishes shine. These croquette like patties are made of #yuca or #cassava filled with #cheese or #quesoblanco (Tropical brand is my favorite). Recipe is as follows:



*4 yuca root vegetables

(or a bag of the frozen bag already shredded and thawed)

*If not found frozen soak them for a couple of hours peel but leave a little corner handle to make it easier to shred

*Shred all of them with fine grater (nice work out)

*Remove excess water by placing in strainer and squeezing it all out

*Next shred a small package of queso blanco (10 oz)

*Place the shredded yuca, one egg, one packet of Goya seasoning with Azafran and mix

*Take handfuls and shape them into croquette shapes

*Have your oil of preference on medium heat and fry both sides to desired crispiness
